MEXICAN SKILLET RECIPE
1 tablespoon olive oil
1/2 substantial pink onion, chopped
3 cloves garlic, chopped

2 bell peppers, chopped
4 cups riced cauliflower

1 cup shredded cheese (I like cheddar and jack)

  6. If you like the corn flavor but for a lot less carbs you can get the canned baby corn cobs and chop them into small pieces and add those instead.
